Roasted Green Beans and Cherry Tomatoes

Roasted Green Beans and Cherry Tomatoes

A very easy side dish that has a rich, but fresh flavor.
 
1 lb fresh green beans, washed and ends trimmed
1 pint cherry tomatoes, halved
1 Tablespoon olive oil
1 tsp kosher salt
1/2 tsp black pepper
 
  • Preheat oven to 450 degrees F.
  • On a large sheet pan, toss all of the above ingredients together.
  • Roast for 15-20 minutes or until cherry tomatoes are slumped and concentrated, but the green beans are still green.
  • Serve immediately.

 

Serves 4-6.
