Start Your Morning Muffin

Serves 12

Almond Streusel:

1/2 cup all purpose flour
1/4 cup unsalted butter
1/4 cup slivered almonds
1/4 cup sugar
 

Muffin Batter:

2 eggs, beaten
1 cup packed brown sugar
3/4 cup canola oil
2 cups milk
1/2 cup oat bran* (or flax meal*)
1/2 cup old fashioned oats
1 tsp baking soda
2 tsp baking powder
1 tsp salt
2 1/4 cups all purpose flour
1/2 cup chopped walnuts
1 tsp vanilla
1/2 cup chopped prunes
 
Preheat oven to 350 degrees F.
 
Make streusel by pinching all of the ingredients together with the tips of your fingers. Set aside.
 
Line a muffin pan with papers or spray with non-stick spray.
 
In a bowl whisk eggs, sugar, oil and milk until combined.
 
In a separate bowl whisk together oat bran or flax meal, oats, soda, powder, salt and flour. Toss prunes
in flower mixture to coat. Add nuts.
 
Combine wet ingredients and stir just to combine. Spoon batter evenly into prepared muffin cups. Top with 1 Tablespoon almond streusel. Bake for 15-20 minutes or until tester inserted into the center of the center most muffin comes out clean. Serve with butter and honey.
